Today’s Wellness Walk highlights the humble Dandelion. Dismiss it as a weed and you’ll miss out on its many nutritional benefits including rich stores of vitamins A, C, E, several of the B vitamins, zinc, lecithin, magnesium, iron and potassium.
Most Americans don’t eat enough bitter foods and dandelion greens are the perfect remedy for that. Bitters stimulate the flow of bile in the gall bladder, helping us digest fats. In addition to tossing them into my salads, I like to munch on a few leaves while I’m preparing meals so that the bile is ready to emulsify whatever fat I consume.
Gall bladder surgery is one of the most common surgeries performed in the US. Many of these surgeries could be avoided by by properly nourishing this vital organ. So, show your hard working gall bladder some love and feed it dandelion and other bitter greens on a regular basis.
